Vegan Budget Cooking Series: Avocado Pasta

Welcome to the fist recipe in our new vegan budget cooking series. This week I will share one of my families favourites.

I really don’t ever follow an exact recipe when I cook. I normally start with an idea online and then adjust the ingredients based on what I have and what is on special that week or normally really cheap. This week I made avocado pasta.  It was delicious.

To start off I will give credit to where I got the idea for the recipe. It was from Damn Delicious. 

The ingredients I used:

Step 1:

I combined the avocados, basil, salt, lemon, 1/4 bulb of garlic, 2 tbsp of olive oil in the food processor for about 20 seconds. Then put that aside.

Step 2:

I cut up the tomatoes in half.  Chopped up 1/4 bulb of garlic.  Mix the tomatoes and garlic with the frozen corn.  Mix in 1 tbsp of olive oil.  Then I spread it out on a baking sheet. I heated it all on broil for about 10 minutes.  Flipping once halfway through.

Note on Tomatoes: Normally I would just use 1 hot house tomato for this recipe and cut into cubes, I can get a hot house tomato for between $0.30 – $0.50 (less if you grow your own).  This week, I got a huge bag (about 2 pints) of cherry tomatoes on the discount rack at Walmart for $2 so I went with that. They were pretty ripe but still very good.

Step 3:

I boiled the noodles. Once the noodles are cooked, you mix them with the veggies and avocado mix. And dig in!

This recipe was super simple and incredibly tasty. You can substitute the fusilli for bowtie pasta or macaroni.  I generally only make this recipe on weeks when avocados are on special.  With full price avocados, the recipe becomes slightly more expensive but still a great value meal!
